Appearence:
Bright mahogany, amber notes
Aroma:
Complex, tightly integrated nose; some pungency.
(straight) The first aroma is lightly medicinal ('Germoline',
brand), then redolent of peat smoke, with a faint whiff of plastic
and green sticks.
(dilute) Plastic emerges first when water is added, but disappears,
and is replaced by a clean hospital aroma. Then comes a delicious
apple tart scent, with cinnamon and short-crust pastry. The 'green'
aromas noted earlier remain in the background and lend freshness.
Flavour:
The mouthfeel is smooth and full, and affects all areas of the
palate. The start is surprisingly sweet, but dries out, with a
sharp, peat-reek catch in the finish - a characteristic of Highland
Park.
Development:
After an hour there is little change, with medicinal phenols in
the foreground and smoky notes behind.
